Parsnip Chips (Trader Joe's)
Are you tired of all combinations and flavors of pork rinds? Do you love keto foods and yet crave texture and crunch in your meals? Trader Joe’s seems to have an answer to most of the cravings of a ketogenic diet: sweetness without all the added extra carbs and calories, crunchiness without guilt and flavor beyond bacon and butter (Trader Joe's Parsnip Chips).
I will confess to one thing: grocery shopping is one of my guilty pleasures. I love walking through a grocery store, looking for low carb alternatives to traditional snacks (thankfully grocery stores are beginning to catch up to the idea that fat is not the enemy). On one of these incursions I happened to discover Trader Joe’s parsnip chips. I am Eastern European, so parsnip is one of those vegetables that I grew up eating in pretty much everything, yet I was never a big fan.
These chips are salty, crunchy, sweet and everything that a good chip should have. They come very close to sweet potato chips, in my opinion and taste amazing next to a big juicy burger (no bun) or simply as a snack. We always have at least 3 bags handy. In appearance, they are rather pale brown and much smaller than potato chips, but for 2 net carbs for 28 g, they are a great replacement. These chips are fried in oil and the ingredients list is short enough: parsnips, oil and salt. They are crunchy, sweet and salty with a very earthy flavor that reminds me of my childhood.
Now, if you will excuse me, I need a snack.
